Ingredients
  

Mousse

  • 2 cups low-fat cottage cheese 16 oz
  • 1/3 cup natural peanut butter
  • 2 tablespoons honey or maple syrup adjust to taste
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • salt pinch

Optional Toppings

Instructions
 

  • If your cottage cheese is particularly wet, drain it in a fine-mesh strainer for about 5 minutes to remove excess moisture.
  • In a food processor or high-powered blender, combine cottage cheese, peanut butter, honey or maple syrup, vanilla extract, cinnamon, and salt. Process until completely smooth and creamy, about 2-3 minutes, scraping down the sides as needed.
  • Sample the mixture and adjust sweetness or add more peanut butter if desired.
  • Transfer mixture to a bowl, cover, and refrigerate for at least 30 minutes to allow flavors to meld and texture to firm up.
  • Spoon into individual serving dishes and add desired toppings just before serving.

Notes

Use small curd cottage cheese for smoother texture. Substitute sweeteners like stevia or dates. Add protein powder for extra protein. Try almond or cashew butter for variety. Fold in whipped Greek yogurt for fluffiness. Store in the refrigerator for up to 4 days. Serve as a dip or parfait.
